Corn Chowder


I bought evaporated milk for other recipe, but the label had a corn chowder recipe, so I decided to try it. I didn’t have all the ingredients, so I made a few adjustments…

Ingredients(2 servings): 

  • 12 oz can Fat free evaporated milk
  • 2 cups Frozen very sweet corn
  • 2 tsp Soup bouillon
  • 1 cup Frozen seafood blend

無脂肪のエバミルク 12oz
冷凍の甘いコーン 2カップ
スープブイヨン 小さじ2
シーフードミックス 適当(冷凍の物です)

Add everything to a pot and cook for 5 min or so.  Then take out some soup and corn to puree in a food processor.   Put the puree back to the pot.  Done! 全てを鍋に入れて沸騰させてシーフードミックスを調理。弱火にしてコーンと汁少々だけを深めの容器に移してハンドミキサーでどろどろにします。これを鍋に戻して混ぜたらできあがり。
It is not as thick as regular chowder, so you may want to add some corn starch.   It tastes pretty good for very low fat chowder.  I may puree more corn to get the thickness next time.  Since the corn is very sweet, the soup is also pretty sweet. 

I used CARNATION Fat Free Evaporated Milk and frozen seafood mix from Trader Joe’s.
